2. Frozen fruit puree

Ravifruit has the highest level of certificate (Sort A) for producing and packaging (IQF - Individual Quick Freezing).
Frozen unpasteurized fruit puree of Ravifruit is produced according to technological peculiarities. It can be an alternative not only to frozen, but also to fresh berries and fruits.
Frozen unpasteurized fruit puree of Ravifruit is used in all dishes where fruits are needed. Fruit puree can be used for making sorbets, ice-cream, pastilas, fruit jellies, charlottes, kissels, cocktails, dessert creams, fillings or layers in confectionery, confectionary antreme, sauces, nappages, jams, jellies, gelato.

The most important aspect of fruit quality is timely harvesting. Fruits must be harvested when they are fully ripe. Ripeness is measured with the Brix degree or according to sugar content.
It is also needed to freeze fruits during the short period of time after the harvesting, because most of fruits may change in 6 hours after harvesting.
Every lot of fruits is checked to exclude the fruits with spots, mould and damages. If lots of fruits don’t satisfy the specifications of Ravifruit, they are declined.
The Ravifruit production was certificated by the BRC-Food (the unique standard of BRC – foodstuffs) for the EFSIS (European Foodstuffs Safety Inspection Service) – equivalent of International certificate.

Sorbet – is a word of Turkic origin that means ‘to drink’.
Historically sorbets were the first icy desserts (ice-cream appeared only in 18th century). The Chinese are forefathers of sorbets. They showed sorbets to the Persian and Arabian people. And they, in their turn, showed sorbets to the Italian.
Sorbet is a frozen mixture of fruit juice and puree. It looks like ice-cream without cream or egg yolks.

Ravifruit has developed the recipe for you to make a delicious sorbet during the short period of time. Making sorbet in a sorbet dish:
Put ready mixture into the sorbet dish. After 4 minutes you will get ready sorbet. Put this on the plate by portion spoon (2-3 balls).
Making sorbet without sorbet dish:
You need to whip mixed ingredients by halo (mixer, blander). The container must be put into the ice. Then put this mixture in the fridge. When the mixture starts to crystallize, take it out of the fridge and mix it again. When the mixture has appropriate consistence, put it on the plate by portion spoon (2-3 balls).
